buttermilk berry muffins

1 cup frozen mixed berries

2 cups ap flour

1 Tbsp baking powder

1/8 tsp salt

heaping 1/2 cup sugar

2 large eggs

1 cup buttermilk

6 tbsp melted, cooled butter

1 tsp vanilla extract

confectioners sugar for dusting

preheat oven to 400

put muffin liners in pan

cut any large berries into small pieces

sift flour, baking powder and salt in large bowl

stir in sugar

lightly beat eggs, then beat in buttermilk, butter and vanilla

make a well in the center of the dry ingredients and add wet ingredients and fruit

stir gently until just combined

spoon batter into muffin cups

bake for 20 minutes

let cool in pan for 5 minutes
dust with confectioners sugar
