here's the recipe for the strawberry and cream muffins

1 heaping cup of strawberrries

2 cups ap flour

1Tbsp baking powder

1/8 tsp salt

heaping 1/2 cup superfine sugar

2 large eggs

1 cup light cream

6 Tbsp melted cooled butter

1 tsp vanilla extract

1/2 cup heavy cream

12 whole strawberries to decorate

 

preheat oven to 400

put muffin liners in pan

chop strawberries into small pieces

sift flour, baking powder and salt in large bowl

stir in sugar and chopped strawberries

lightly beat eggs, then beat in light cream, butter and vanilla extract

make a well in the center of the dry ingredients and pour in the beaten liquid ingredients

stir gently until just combined

spoon batter into muffin cups

bake for 20 minutes

whip heavy cream until stiff

when the muffins are cool, put whipped cream on top and garnish with strawberry

chill until ready to serve
