 Duchess loves the muffins!

2 Tbsp honey

2 3/4 cups water

1/4 cup unsweetened applesauce

1/8 tsp vanilla

1 egg

1/2 cup chopped peanuts

4 cups whole wheat flour

1 Tbsp baking powder

1 Tbsp cinnamon

1 Tbsp nutmeg

preheat oven to 350

mix honey, water, applesauce, vanilla, egg

in another bowl mix peanuts, flour, baking powder, cinnamon and nutmeg

add wet ingredients to the dry and stir to mix well

spoon into greased muffin tin, filling each 2/3rds full

bake for 35 minutes

(we made mini muffins, and baked for 25 minutes)
